WONDERFUL, EASY JEWISH APPLE
CAKE
 
4 cooking apples, diced thin
3 tsp. cinnamon
5 tbsp. sugar
4 eggs
2 c. sugar
1 c. oil
Scant c. sugar
3 c. flour
3 tsp. baking powder
Juice of 1 orange
2 1/2 tsp. vanilla

Mix first 3 ingredients and let stand 15 minutes. Beat eggs and sugar. Add oil and beat well. Add flour and baking powder and beat well. Add juice and vanilla. Alternate batter and apples in layers with remaining apples on top. Bake in greased tube pan. Bake at 350 degrees for 1 hour. Let cool.
