CARROT KUGEL 
3 c. grated raw carrots
3/4 c. matzoh meal
2 eggs, slightly beaten
1/2 c. minced onion
2 tsp. parsley
2 tbsp. melted butter
10 1/2 oz. can of condensed chicken broth

Mix all ingredients together. Pour into a greased casserole. Bake at 350 degrees until it bubbles.
