CHICKEN SICILIAN 
3-4 pieces of chicken
Salt
Pepper
Paprika
1/4 c. chopped onion
1/4 c. chopped green pepper
1/3 c. uncooked rice
1/3 c. boiling chicken broth
1 med. tomato, diced
2 tbsp. Parmesan
1/2 tsp. oregano
1/2 tsp. garlic salt
1/4 tsp. basil

Wash and dry chicken. Sprinkle with salt, pepper and paprika. Bake uncovered at 450 degrees for about 30 minutes or until brown. Mix remaining ingredients together. Arrange chicken on top. Cover and bake at 350 degrees for 20 to 25 minutes or until rice is done.
