CHICKEN SICILIAN 
2 boneless breasts of chicken cut into 1x4 inch strips
1 c. chopped garlic
2 c. olive oil
1 whole potato, cut into 1 inch chunks
1 c. bread crumbs

In large skillet bring oil almost to a boil. Add 1/2 garlic and potatoes; cook for 6-8 minutes until potatoes are lightly browned. Add breaded chicken strips and rest of garlic. Stir and cook until chicken and potatoes are thoroughly cooked. Serve piping hot.
