SICILIAN MEATLOAF 
2 eggs, beaten
3/4 c. bread crumbs
1/2 c. tomato juice
1/2 tbsp. oregano
1 sm. garlic clove or garlic salt
2 lb. ground beef
1 pkg. chipped ham (about 3 oz.)
3 slices mozzarella cheese
6 oz. shredded mozzarella cheese

Combine first 5 ingredients and 1/4 teaspoon salt and 1/4 teaspoon pepper. Add hamburger meat. Mix well. Spread meat in 12 x 10 inch rectangle. Arrange ham on top. Top with shredded cheese. Roll up into loaf, seal the edges and turn sides down, place in 13 x 9 x 2 inch pan.

Bake in 350°F. oven for about 1 hour or until done. Last 15 minutes arrange sliced cheese on top of meatloaf.
