GRISTELLE - SICILIAN ROLLS | |
4 c. flour 1 tsp. salt 1 tbsp. sugar 1 tbsp. olive oil 1 pkg. dry yeast in 1/4 c. warm water 1 c. warm water 1 egg with 1 tsp. water for wash Sesame seeds Combine flour, salt and sugar in a large bowl or on a board. Make a well and add 1 tablespoon olive oil. Rub into the flour mix using your hands until well mixed. Add yeast and again work in the flour mix until well blended. Gradually add the warm water until dough is formed. Gather dough and knead until smooth. Add flour as necessary while kneading. This is a hard dough. When dough is smooth, place in a large bowl (not greased) and let rise until double, about 1 1/2 hours. Punch down and divide into 2 parts. Cut each part into 6 pieces forming each into a round ball. Flatten slightly and place on cookie sheet and let rise until double. Bake at 400 degrees until brown. If desired, dip each roll in the egg wash and the sesame seeds before placing on the cookie sheet. |
