MEATLOAF SICILIAN STYLE | |
2 to 3 lbs. ground beef 4 to 6 slices cheese (Italian or American) 4 to 6 slices Capacola or boiled ham 1/2 c. tomato juice or 1/2 can tomato soup 3/4 c. bread crumbs, soft 1/2 tsp. oregano 1/4 tsp. salt 2 eggs, well beaten 1/4 tsp. pepper Dash of garlic powder Dash of onion powder or minced onion Mix all but cheese and ham together. Spread on wax paper until about 1/2 inch thick. Lay cheese and ham on top to cover. Roll up like jelly roll. Seal edges. Bake at 350 degrees for 1 1/2 to 2 hours on foiled lined pan. Optional: Last 10 minutes, sprinkle shredded cheese on top. |
