COUNTRY STYLE MEAT LOAF | |
2 tbsp. salad oil 1 med. onion, chopped 1 celery stalk, finely chopped 3 white or whole wheat bread crumbs or slices 2 lbs. lean ground beef 1 med. carrot, finely shredded 1/2 tsp. salt 1/4 tsp. black pepper 1 egg 1 tbsp. light brown sugar 1 tbsp. cider vinegar 1 tbsp. prepared mustard 1 (8 oz.) can tomato sauce Put salad oil in 2 quart saucepan over medium heat - add chopped onion and celery - cook 10 minutes stirring occasionally with slotted spoon - tear bread slices into large bowl (small pieces). Add onion and celery mixture - add ground beef, shredded carrot, salt and pepper, eggs and one half can tomato sauce - stir thoroughly in 12 x 18 inch baking dish. Shape ground beef with hands into 8 x 4 inch loaf pan. In cup with spoon combine light brown sugar, cider vinegar, prepared mustard and mix thoroughly. Combine light brown sugar, cider vinegar, prepared mustard and remaining tomato sauce thoroughly. Spoon sauce over meat loaf in baking dish. Bake at 350 degrees for 1 1/2 hours. |
