TROPICAL SPONGE COOKIES 
1 cup of all-purpose flour
1/8 teaspoon of baking soda
1/2 cup orange juice
1 banana
1/2 tablespoon sugar

Preheat oven to 250°F.

Peel the banana and cut it up into slices. Mash it until it is still slightly chunky. Mix flour, baking soda, sugar, and the banana in a medium bowl.

After the mixture is smooth, add the orange juice to batter and mix thoroughly. Add a 1-inch circle of dough onto an ungreased cookie sheet. Bake in oven.

Poke through with a fork every 2-4 minutes. Bake in oven until solid. Results may vary.
