STUFFED ZUCCHINI 
4 med. zucchini
2 tbsp. water
1/4 c. butter
1 3/4 c. water
1 (6 oz.) pkg. chicken flavored stuffing mix

In 7 1/2 x 12 inch utility dish, place whole zucchini with 2 tablespoons water. Cover with wax paper. Cook on HIGH for 10 - 12 minutes, turning dish once. Cool slightly. Cut in half, lengthwise. Scoop out centers and save. In 4 cup measure, combine seasoning packet from the stuffing mix with water and butter. Cook on HIGH for 3 - 4 minutes. Cover and let stand for 5 minutes. Stir in bread crumbs from mix to moisten. Add the scooped-out zucchini centers. Spoon into cooked zucchini shells. Heat in utility dish on HIGH for 4 - 6 minutes. Makes 8 servings.
