MINI MEAT LOAVES 'N VEGETABLES | |
1 1/2 lbs. hamburger 1/2 tsp. salt 1 egg 1 (8 oz.) can tomato sauce 1/2 tsp. Italian seasoning 1 (2.8 oz.) can French fried onions 6 sm. redskin potatoes, sliced thin 1 (16 oz.) bag frozen broccoli, corn, red pepper combination, thawed and drained Combine meat, salt, egg, 1/2 can tomato sauce, seasoning and 1/2 can onions. In 9x13 inch baking dish, form 3 miniature loaves. Place potatoes around loaves. Bake, covered, at 375 degrees for 35 minutes. Place vegetables around loaves; stir to combine with the potatoes. Lightly season with salt and pepper, if desired. Top meat loaves with remaining tomato sauce. Bake, uncovered, 15 minutes. Top loaves with remaining onions; bake uncovered 5 minutes longer. Makes 3-6 servings. |
