MINI MEAT LOAVES WITH VEGETABLES 
1 1/2 lbs. ground chuck or ground round
1/2 tsp. salt
1 (8 oz.) can tomato sauce
2.8 oz. can French fried onions
16 oz. bag frozen broccoli, corn, red pepper combination, thawed & drained
1 egg
1/2 tsp. Italian seasoning
6 sm. new potatoes, sliced thin with skin

Combine meat, salt and egg and 1/2 of tomato sauce, Italian seasoning and 1/2 can of the French fried onions. In 9"x13" baking dish from 3 mini meat loaves. Place potato slices around loaves. Bake, covered 35 minutes at 375 degrees. Place vegetables around loaves; stir to combine with potatoes. Lightly season with salt and pepper, if desired (I use Morton's Nature Seasoning Blend). Top meat loaves with the remaining tomato sauce. Bake, uncovered 15 minutes. Top loaves with remaining onions and bake, uncovered 5 minutes longer.
