SUMMER VEGETABLE MARINADE 
You wanted something new to do with all that zucchini, here it is! 4 sm., slender yellow squash 1 red bell pepper 1 red onion 12 mushrooms

MARINADE:

1 c. olive oil
1/3 c. good quality wine vinegar
2 garlic cloves, minced
1/4 c. sugar

Slice all vegetables very thinly. A food processor is ideal for this. Layer vegetables in glass jar with tight fitting lid or plastic container with leak-proof lid. Make marinade by combining all ingredients in saucepan and cooking until sugar is dissolved. Pour marinade over vegetables and seal jar/plastic container. Every hour, shake the jar/container so that all vegetables are coated with marinade. Do this for 8 hours. Serve cold.
