SUMMER VEGETABLE MEDLEY 
2 med. zucchini, sliced
2 med. yellow squash, sliced
2 lg. tomatoes, diced
1 med. onion, sliced
4 slices bacon, fry & crumble
1/2 c. Italian bread crumbs

In a deep saucepan add 3 tablespoons bacon drippings, add in layers: sliced zucchini, sliced yellow squash, sliced onion and tomatoes. Top with bacon and Italian bread crumbs. Cover and simmer until onion is clear and all vegetables are tender. For variety you can add 4 small potatoes, sliced or diced and 1/2 cup frozen corn.
