FRIED SPINACH 
1 (15 oz.) can spinach, well drained
2 cloves garlic, chopped
2 slices bread
2 eggs
3 tbsp. oil

Better yet, squeeze liquid out and chop.

Use a well seasoned iron skillet, if you have one. Heat spinach in skillet with oil and garlic. Hold bread under water and squeeze all water out and break up into skillet. Beat eggs and scramble into spinach until the eggs are well cooked. This should cook dry.
