SAVORY FRIED EGGS ON SPINACH 
1 clove garlic, halved
2 to 3 tbsp. olive or other oil
4 eggs
Salt and pepper to taste
1 (10 oz.) pkg. frozen chopped spinach
1/4 c. grated Parmesan cheese

Saute garlic in the oil in skillet until very lightly browned; remove garlic. Fry eggs in remaining oil until desired doneness. Season with and pepper. Cook and drain spinach and arrange on hot platter. Arrange eggs on spinach and sprinkle with cheese. Makes 4 servings.
