BAKED BEANS | |
2 lbs. sm. white Navy beans 1 lb. salt pork in a slab 1 lg. dry onion, chopped 1 1/2 bottle molasses (Brer Rabbit Green Label) 4 c. catsup 2 to 3 tbsp. sugar Salt and pepper Soak beans overnight. Next day cook salt pork and onions until salt pork is nearly done. Add beans and cook until tender. Take out meat and cut into small pieces. Add to the beans some salt if needed and pepper. Next add 3/4 bottle of molasses and 2 cups catsup and part of the sugar. Mix well. Taste, then keep adding the rest of the ingredients until it tastes the way you like it. The beans should be quite watery. Add hot water if they need more liquid. Add 1/2 of the salt pork and mix well. Pour in bean pot, lay the rest of the meat over the beans. Bake in a slow oven 275 or 300 degrees for 3 to 4 hours. |
