BAKED EGGPLANT 
1 lg. eggplant
1 c. milk
3/4 c. grated cheese
2 slices bread
2 eggs, separated
Salt and pepper to taste

Peel and boil eggplant in salt water about 5 minutes. Remove from water and dice in 1-inch pieces or larger. Soak bread in milk. Beat egg yolks and add to bread mixture. Drain eggplant well and add salt and pepper to taste. Add 3/4 cup cheese to eggplant and bread mixture. Beat egg whites until stiff, fold into eggplant mixture. Place in baking dish, dot top with butter and more cheese. Lightly grease baking dish. Bake at 350 degrees for 25 to 30 minutes.
