BELLE'S STUFFED MUSHROOMS | |
18 medium size mushrooms 1/2 (8 oz.) pkg. cream cheese, softened 1/4 cup Parmesan cheese 2 tbsp. milk 18 almond slices (1 per mushroom) 1/4 cup (1/2 stick) unsalted butter, melted Preheat oven to 350°F. Wash and clean mushrooms. Remove stems and set aside. Cream together cheeses and milk. Fill mushroom cups with cheese and top with an almond slice. Dip the bottom of each mushroom in melted butter and place on buttered cookie sheet. Bake in preheated oven for 15 minutes. Servings: 6 (3 mushrooms per serving). Makes 18 stuffed mushrooms. Nutrition (per serving): 189 calories, 16.8g total fat, 9g saturated fat, 1.3g polyunsaturated fat, 401.1mg potassium, 5.2g carbohydrates, 2.3g sugar, 1.6g fiber, 7.2g protein, 40mg cholesterol, 114.1mg sodium, 81.5mg calcium, 455.2IU Vitamin A, 2.2mg Vitamin C, 21.1IU Vitamin D, less than 1mg iron.
