BRAN MUFFINS 
1 c. plain non-fat yogurt
1 tsp. baking soda
1 c. flour
1/2 c. butter or oil
3/4 c. sugar
1 egg
1 c. bran (oat or wheat)
1 tsp. cinnamon
1/4 c. raisins

Heat oven to 400 degrees. Fill muffin tins with baking cups. Combine yogurt and baking soda; let stand. Cream butter and add sugar. Add egg and beat well. Add yogurt and baking soda. Add bran and flour gradually. Spoon batter into baking cups. Bake for 15 to 20 minutes or until brown. Let cool. Can be frozen, just wrap well. Microwave about 40 seconds or let come to room temperature to serve.

Variations: Add shredded apple. Add a ripe, mashed banana. Add 1/2 cup blueberries. Add 1 teaspoon allspice and/or 1 teaspoon cloves. Add 1 teaspoon of jam in middle of muffin. Add dried apricots. Add some dates.

Since microwave ovens vary in power, you may need to adjust your cooking time.
