OAT BRAN MUFFINS 
1 c. all-purpose flour
1/2 c. oat bran
1/2 c. uncooked old fashioned rolled oats
1/3 c. packed light brown sugar
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1 c. buttermilk
1/4 c. butter, melted and cooled
1 egg, lightly beaten
2 tbsp. vegetable oil
1 tsp. vanilla
3/4 c. chopped pitted dates
3/4 c. chopped walnuts

Preheat oven to 400 degrees. Grease muffin tins well. In large bowl, stir flour, oat bran, rolled oats, brown sugar, baking powder, baking soda and salt. In another bowl stir together buttermilk, butter, egg, oil and vanilla. Make a well in the center of dry ingredients; add buttermilk mixture stirring just to combine. Stir in dates and nuts.
