PORK CHOP SCALLOP 
4 pork loin or rib chops, 1/2 to 3/4 inch thick
Salt and pepper to taste
1 pkg. Betty Crocker scalloped potatoes
2 tbsp. chopped pimento (optional)

Trim excess fat from pork chops; grease 10 inch skillet with the fat. Brown chops on both sides. Season to taste with salt and pepper. Remove from skillet. Empty potatoes and seasoning packet (sauce mix) into same skillet. Stir in pimento and amounts of water and milk called for on package. Heat to boiling, stirring occasionally. Reduce heat; place pork chops on top. Cover and simmer 30 to 35 minutes or until potatoes are tender.
