POLISH CREAM CHEESE CAKE 
1 c. sifted flour
1/2 c. sugar
2 tsp. grated lemon peel
1/2 tsp. vanilla
1/2 c. butter
1 slightly beaten egg yolk

CHEESE FILLING:

5 (8 oz.) pkgs. cream cheese
1 3/4 c. sugar
3 tbsp. flour
2 tsp. grated lemon peel
1/4 tsp. salt
1/2 tsp. vanilla
5 eggs
2 egg yolks
1/4 c. heavy cream

Crust: Combine flour, sugar, and lemon peel. Cut in butter until crumbly. Add egg yolk and vanilla. Blend until smooth. Pat 1/3 of dough on bottom of a spring-form pan (sides removed) and bake at 400 degrees about 6 minutes until golden brown. Cool. Butter side of pan and attach to bottom. Put remaining dough on sides to 2 inches height.

Filling: Stir cheese to soften, then beat until fluffy. Combine sugar, flour, lemon peel, salt, and vanilla and gradually blend into cheese. Add eggs and yolks, one at a time, beating well after each addition. Stir in heavy cream. Turn into pan.
