RHUBARB CUSTARD PIE 
3 generous c. rhubarb, peeled and cut into 1/2 inch pieces
1 c. sugar
2 tbsp. flour
1/8 tsp. salt
2 eggs, beaten
Pastry for double crust pie

Mix sugar, flour, salt and beaten eggs. Add rhubarb and pour into pastry-lined pie pan. Cover with strips of pastry. Bake at 425 degrees for 10 minutes. Reduce heat to 325 degrees and bake 25 to 30 minutes longer.
