SALMON CROQUETTES | |
Tastes great with syrup or hot sauce. For breakfast or dinner! 2 cans pink salmon, drained and bones removed 1 onion, chopped 1 red bell pepper, chopped 1 green bell pepper, chopped 1 (15 oz.) can corn, drained 2 tsp. black ground pepper 2 eggs olive oil vegetable oil, for frying all-purpose flour Drain and remove the bones from the 2 cans of pink salmon and add to a medium size mixing bowl. Cover the bottom of a sauté pan with olive oil. Sauté the chopped onions, corn and bell peppers. Add the onions, corn and bell pepper to the salmon. Add 2 eggs to the mixture. Season with 2 teaspoons of pepper. Mix with your hands. Form into patties. Coat both sides of patties with flour. Lightly fry on both sides in a pan with just enough oil to cover the bottom of the pan. Enjoy! Submitted by: Daquitta |
