PERFECT SALMON CROQUETTES | |
1 (14 to 16 oz.) can pink salmon 1 egg 1 large stalk celery, finely chopped 1/2 cup yellow onion, finely chopped 1/4 cup finely ground plain bread crumbs 2 tbsp. water 1/4 tsp. salt 1/4 tsp. pepper 1 dash Tabasco 1/4 tsp. ground coriander 1/3 cup corn meal 2 tbsp. light vegetable oil Drain liquid from salmon. Remove skin, dark flesh and spine from salmon. (Keep liquid and trimmings for your cat who will already be pacing and whining ;) Combine all ingredients except corn meal and oil in mixing bowl. Mix with your hands. Mix will be very soft. Press with hands into six oblong patties. Coat in corn meal. Heat heavy skillet about 3 minutes over medium high heat. Add oil and heat for 1 minute.
