FRUIT CAKE 
1 (1 lb.) jar mincemeat
1 c. raisins
1 c. sugar
1 c. nut meats
1/2 c. melted butter
1/2 tsp. salt
1 tsp. vanilla
2 separated eggs
2 c. flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda

To mincemeat add raisins, nutmeats, sugar, butter, vanilla and egg yolks and beat thoroughly. Sift flour, baking powder, soda and salt together once, then sift and fold into mincemeat mixture. Fold in stiffly beaten egg whites. Pour into a well greased tube cake pan and bake in oven at 325 degrees for 1 1/2 hours.
