FRUIT CAKE 
2 1/2 c. sifted cake flour
1 tsp. baking powder
2 eggs, lightly beaten
1 jar (28 oz.) ready to use mincemeat
1 can sweetened condensed milk
1 c. walnuts, coarsely chopped
2 c. mixed candied fruit

Butter 9 inch tube pan or spring form. Line with wax paper. Butter again.

Sift flour and baking soda. Combine egg, mincemeat, condensed milk, walnuts and fruit. Fold in dry ingredients. Pour into pan. Bake in slow (300 degree) oven for 2 hours until center springs back and top golden brown. Decorate with walnuts and cherries, if desired.
