BEAT THE HEAT CHEESECAKE 
2 pkgs. Knox unflavored gelatin
1 c. cold water
2 (8 oz.) pkgs. cream cheese, softened
1 c. creamed cottage cheese
3/4 c. sugar
1 c. whipping or heavy cream
1 tsp. vanilla
1 graham cracker pie crust

In 2 cup glass measuring cup sprinkle unflavored gelatin over 1/2 cup cold water; let stand 2 minutes. Microwave on high 1 1/2 minutes. Stir and let stand 2 minutes.

With electric mixer combine both cheeses and sugar until smooth. Stir in cream and remaining 1/2 cup water as well as vanilla. Gradually add gelatin mixture beat 5 minutes with mixer until smooth. Put into pie crust. Refrigerate 5 hours. Garnish with fruit.

Since microwave ovens vary in power, you may need to adjust your cooking time.
