ALMOND MERINGUE DELIGHTS 
3 egg whites

Use glass bowl and let stand at room temperature for 30 minutes.

1/4 tsp. cream of tartar
1/4 tsp. almond extract
1 c. sugar
1 (8 oz.) container cream cheese (with pineapple or strawberry cream cheese)
Fresh fruit or preserves

Add tartar and almond to egg white. Beat to form soft peaks. Add sugar, very gradually! Drop by tablespoons on brown paper on baking sheet. Make a well in center with spoon, building up sides. (Like a birds nest.) Bake at 300 degrees for 20 minutes. Turn off oven. Let cookies dry with door closed (in oven) for 30 minutes. Store in cool dry place until ready to serve. Before serving, spoon a teaspoon of cream cheese in meringues. Top with fruit.

FRUIT: Raspberry, 1/2 strawberry, mandarin orange, grapes, cherries, kiwi.
