FRESH SUMMER SQUASH CASSEROLE 
Wash and slice 1 yellow summer squash, 1 zucchini squash, 2 fresh tomatoes, and 1 small onion. Add a small amount of water (approximately 1/4 to 1/2 cup). Bake in moderate oven for 1 hour. Salt and pepper to taste or herb season ingredients of your choice.
