SUMMER SQUASH CASSEROLE 
8 zucchini or yellow squash
1/2 c. butter
1 c. Cheddar cheese
1 c. sour cream
Salt & pepper to taste
1 egg yolk, beaten
Paprika
1/4 c. chives, chopped
Parmesan cheese
1 c. bread crumbs

Slice squash, steam or boil for several minutes. Heat butter, cheese, sour cream, salt, pepper, egg yolk, paprika and chives until these are blended and make a sauce. Pour over squash. Sprinkle bread crumbs over top. Coat with Parmesan cheese and dot with butter. Bake for approximately 45 minutes.
