SUMMER SQUASH CASSEROLE 
2 c. dry herb flavored stuffing mix
2-3 yellow squash, sliced, cooked, and drained
1 c. sour cream, or sour cream substitute
1 can cream of celery soup, or mushroom or cream of chicken
2 carrots, shredded
1 sm. onion, finely chopped

In bottom of 8 x 12 baking dish, spread 1 cup of stuffing mix (dry). Combine squash, sour cream, soup, carrots, and onions. Pour in baking dish. Top with remainder of stuffing mix. Bake for 30 minutes or until completely hot.
