SPINACH SALAD 
2 bunches fresh spinach, washed and crisped in refrigerator
1 purple onion, sliced in rings
3/4 lb. fresh mushrooms, sliced
1/2 lb. bacon, cooked crisp and crumbled (optional)

Tear spinach. Toss with onion slices and mushrooms and bacon. Just before serving, toss with dressing.

DRESSING:

3/4 tbsp. poppy seed
1/3 c. white vinegar
3/4 c. olive oil
1/3 c. sugar
3/4 tsp. salt
1/3 tsp. prepared mustard

Combine ingredients and mix well. You may use a blender to mix ingredients.
