1 1/2 c. diced chicken, shrimp or pork Celery Onions SAUCE: 3/4 c. liquid 2 tbsp. cornstarch 2 tsp. soy sauce Pinch of sugar If chicken is used, boil some and then dice to same size. Shrimp or pork is diced raw. In an iron pot of suitable size, put in enough oil to just coat pan and get hot. Saute meat, stirring constantly. Add onions, heat high, stirring 5-10 minutes (until onions are cooked, not brown). Add celery, salt and pepper and liquid to just cover. After coming to boil, stir constantly, cook 15 minutes. Add 1 can of drained bean sprouts, heat still high, mix thoroughly, bring back to bubble and cook 15 minutes, stirring occasionally. Add sauce (thickening), stir in and cook at gentle bubble 10-15 minutes. During this time, correct season to taste, and add liquid if too thick. Juice should not be watery. If to thin add some cornstarch. Serve over noodles or rice. |
