EGG FU YOUNG 
1 cooked chicken, deboned and cut in pieces
Broth from chicken for gravy
1 sm. box of instant rice
6 eggs, beaten
1 tbsp. flour
Salt and pepper to taste
1 can bean sprouts, drained
1 medium size onion, chopped
Soy sauce to taste
1 can noodles

Beat eggs; add flour and beat until frothy. Add onion, bean sprouts, salt, and pepper. Heat 1 tablespoon oil on griddle. Make saucer-size pancakes from egg mixture. Place one pancake on plate; add rice on top, gravy, soy sauce, then noodles.
