HAZEL'S EGG FOO YOUNG 
1 lb. bag shrimp, fresh or frozen
2 bunches green onions
1 can bean sprouts
1 can mushrooms
8 lg. eggs
2 cans chicken broth
2 tbsp. corn starch
1/4 tsp. salt
1/4 tsp. black pepper
2 c. rice
1/2 c. water
Soy sauce
2 tbsp. cooking oil

Beat eggs and season with salt and pepper. Add chopped green onions and stir well. Drain bean sprouts and mushrooms; add to mixture. Clean and devein shrimp. Add shrimp to mixture. Stir in well and set aside. Pour broth into sauce pan and heat. Mix corn starch with 1/2 cup water, and add to broth, stirring constantly. Add a few drops of soy sauce for color; set aside. Cook rice. Heat cooking oil in large skillet or wok. Spoon mixture into pan and fry into patties; cook until thoroughly done. Serve patties over rice. Top with brown sauce and soy sauce. You may substitute chicken, beef or pork instead of shrimp.
