EGG FOO YOUNG 
6 eggs, well beaten
1 can bean sprouts, drained
1 c. meat (your choice)
1 sm. onion, chopped
1/2 tsp. salt
1/8 tsp. pepper
1 tsp. butter

Mix all ingredients, except butter. Do this lightly. Melt butter in a 6-inch skillet. Pour 1/2 cup of mixture into skillet. Cook until set and brown on edges. Turn and brown other side. Place on hot plate and keep covered until all are cooked. Serve with rice, cover with 3 tablespoons of Chinese brown gravy.
