CORN CASSEROLE 
1 can whole kernel corn, drained
2 eggs
1 pkg. Jiffy muffin mix
1 onion, finely chopped
2 tbsp. green pepper
1 pt. sour cream
2 c. grated cheddar cheese
1 stick butter

Saute onion and pepper in butter. Fold corn into beaten eggs and add muffin mix. Add onions and peppers. Pour into 9 x 13 pan. Spread with sour cream and cheese. Bake at 375 degrees for 40 minutes.
