DIAMOND SQUARES 
1 c. self-rising flour
1/2 tsp. cinnamon
3 eggs
1/2 tsp. orange peel
1/4 c. skim milk
1 c. English walnuts, coarsely chopped
Lite or sugar free maple syrup

In a bowl, sift together flour and cinnamon. Add eggs, one at a time, mixing well with electric mixer, after each addition. Add orange peel and milk; mix well. Fold in the nuts; mix well.

Pour into a greased 8 inch pan. Bake at 325 degrees for 30 minutes or until done. Cool and cut into a diamond shape. Should have 36. Drizzle maple syrup on top. Refrigerate 6 hours before removing pieces from the pan and serving.
