ITALIAN BRUNCH QUICHE | |
1 box Pillsbury All Ready Pie Crust 1 1/2 lbs. Italian sausage (Rudy's Farm is good) 1 c. chopped onion 1 lg. red or yellow sweet pepper, chopped 1 box frozen chopped spinach, thawed and well drained 1/4 c. grated Parmesan cheese 1 tsp. basil 1 tsp. oregano 6 eggs, beaten 1 1/2 c. milk 1 c. shredded Mozzarella cheese Preheat oven to 425 degrees. Spray 11 x 15 inch baking pan with pam. Press pie crust into pan (this will make a very thin crust). In a large skillet, brown sausage and onions and peppers, drain off fat. Combine with spinach, cheeses and spices. Stir in eggs and milk. Pour into crust or hold covered overnight. Bake for 20-25 minutes until knife inserted in center comes out clean. Two 9 x 13 inch pans can be used, decrease cooking time by about 5 minutes. |
