APPLE NUT MUFFINS 
1 1/2 c. flour
1 c. sugar
2 tsp. each baking powder and cinnamon
1 tsp. baking soda
1/2 tsp. cloves
1 c. chopped apples
1/2 c. chopped nuts
2 eggs
1/2 c. buttermilk
1/2 c. butter, melted

Mix dry ingredients. Add apples and nuts; toss to coat. In a small bowl, beat eggs with fork; beat in buttermilk and butter. Add egg mixture to flour mixture. Stir just until blended. Fill muffin tins 2/3 full and top with Streusel topping. Bake at 375 degrees for 15 to 25 minutes.

STREUSEL TOPPING:

Mix 1/2 cup flour, 1/3 c. brown sugar, 1 teaspoon cinnamon and 1/4 cup melted or soft butter. 14 to 16 muffins.
