BUTTERSCOTCH YAMS | |
6 med. size yams, cooked, peeled & halved 1 c. packed brown (light) sugar 1/2 c. dark corn syrup 1/4 c. heavy cream 3 tsp. corn oil butter 1/2 tsp. salt Arrange yams in single layer in shallow baking dish. Bake at 350 degrees for 15 minutes. In heavy 2 quart pan stir sugar, corn syrup, cream, butter and salt. Stir constantly, bring to boil for 5 minutes over medium heat. Pour over yams. Bake for 15 minutes more and baste twice. Makes 6-8 servings. |
