ORANGE YAMS 
4 lb. yams
1 tsp. honey
Juice and grated rind of 2 oranges
1 tbsp. butter
Salt, pepper and nutmeg to taste

Boil yams (cover) until tender; drain. Drop into cold water; slip off skins and mash. Blend in remaining ingredients and spoon into buttered casserole. Bake at 325 degrees for 40 minutes until golden. Yield: about 16 servings.
