ORANGE PORK DINNER | |
6 pork chops 1 1/2 tsp. salt (optional) 1/4 tsp. pepper 6 slices onion 1/2 c. water 1 tsp. grated orange peel 1/3 c. orange juice 2 tbsp. lemon juice 1/2 tsp. salt 2 lbs. sweet potatoes or yams, cut into 1/2 inch slices (no juice) 6 thin slices of orange 1 tbsp. cornstarch 1/4 c. cold water Grease large skillet, slice fat on pork chop and brown with onions. Mix sugar, cornstarch, water, orange and lemon juice plus salt (optional) and pepper; pour over chops. Cover, simmer 30 minutes. Add orange slices and sweet potatoes to sauce. Cover, simmer 45 minutes or until potatoes are tender. Makes 6 servings. Serve with rice if desired. Great one skillet dinner. |
