BAKED CHICKEN BREAST AND RICE | |
3 chicken breasts, split in half 3 tbsp. olive oil 2 lg. onions 2 1/2 c. Minute Rice Preheat oven to 350 degrees. Use a large 5-quart pan with rack in bottom. Put in olive oil. Slice onions and place all around rack. place chicken breasts (cut in half) on rack on top of onions. Salt and season to taste. Place in oven 1 1/2 hours. Take juice in bottom of pot (if it does not measure 2 1/2 cups, make up difference with water). Put in smaller pot and bring to boil. Put in rice, stir and set aside for 5 minutes before serving. |
