ZUCCHINI BREAD 
3 eggs
1 c. cooking oil
2 c. zucchini, chopped or blended
1 tsp. vanilla
1/2 tsp. salt
2 c. sugar
1/4 tsp. baking powder
1 tsp. baking soda
3 tsp. cinnamon
3/4 tsp. nutmeg
1 c. nutmeats
3 c. flour

Combine first 6 ingredients and mix well, combine dry ingredients, add to first mixture and stir well to combine; add nuts. Pour into 2 greased and floured loaf pans. Bake 1 hour at 325 degrees.
