SOUTHERN PECAN CAKE 
1 pkg. Duncan Hines Moist Deluxe French Vanilla Cake mix
2 c. pecan pieces
1 pkg. (4 serving size) vanilla instant pudding and pie filling mix
4 eggs
1 c. water
1/3 c. Crisco oil or Puritan oil
1 container (16 oz.) Duncan Hines Cream Cheese Frosting

1. Preheat oven to 350 degrees F. Grease and flour two 9 inch round cake pans.

2. Toast pecans on baking sheet at 350 degrees F. for 4 to 5 minutes or until fragrant. Cool. Chop finely. Measure 1 1/2 cups. Reserve remaining pecans for garnish.

3. Combine cake mix, pudding mix, eggs, water and oil in large bowl. Beat at medium speed with electric mixer for 2 minutes. Fold in 1 1/2 cups pecans. Pour into pans. Bake at 350 degrees F. for 35 to 40 minutes or until toothpick inserted in center comes out clean. Cool in pans 15 minutes. Invert onto cooling rack. Cool completely.

4. Fill and frost cake with cream cheese frosting. Garnish with reserved pecans. Refrigerate until ready to serve. 12 servings.
