CHILLED CUCUMBER SOUP | |
Preparation: 10 minutes. Cooking: 10-15 minutes. Easy - must do ahead. Serves 4. 2 c. chicken broth or 2 bouillon cubes, dissolved in 2 c. water 2-4 cucumbers, peeled, seeded and cut in strips 1 tbsp. onion flakes or freshly chopped onion Salt and freshly ground pepper, to taste 1 tsp. dillweed 2 c. sour cream or yogurt Chopped cucumber and dill for garnish Combine broth, cucumbers and onion and cook over low heat until cucumbers are just tender. Whirl in blender with seasonings. Chill. Combine with sour cream. Serve in chilled cups sprinkled with chopped cucumber and dill. |
