CRANBERRY-ORANGE BREAD | |
Vegetable cooking spray 1 3/4 c. all-purpose flour 1/2 c. quick cooking oats, uncooked 1/2 c. sugar 2 tsp. baking powder 1/2 tsp. ground nutmeg 1/4 tsp. salt 3/4 c. skim milk 1/4 c. butter, melted (1/2 stick) 1 egg, slightly beaten 1 tsp. vanilla extract 1 pkg. (10 oz.) frozen cranberry-orange relish, thawed Whole cranberries rolled in sugar (optional) Preheat oven to 350 degrees. Coat 8 1/2 x 4 1/2 inch loaf pan with vegetable oil cooking spray. In a large bowl, combine flour, oats, sugar, baking powder, nutmeg and salt. In a small bowl, combine milk, butter, egg and vanilla. Add milk mixture and cranberry-orange relish to flour mixture; mix well. Spoon into prepared loaf pan. Bake 55-60 minutes. Remove from oven and cool in pan for 10 minutes. Remove from pan and cool completely on wire rack. Garnish with cranberries. Makes 12 slice servings. Preparation time is 10 minutes. Baking time is 55-60 minutes. Cooking time is 1 hour. Calories: 200 per slice. |
